Lao Gan Ma Noodles (via)

Very quick to get together, definitely not healthy.

Ingredients

  • 2 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1/2 tsp Chinese black vinegar
  • 1 tsp ginger
  • 1 tbsp garlic
  • 2 tbsp lao gan ma
  • 1/2 tsp sesame oil
  • 3 tbsp za-cai
  • 2 tsp toasted sesame seeds
  • 1/3 cup raw peanuts
  • 200 grams dried rice noodles
  • 1 cup leafy greens (e.g. bok choy)
  • 1/4 cup cilantro

Instructions

  1. Cook rice noodles according to package instructions. In final minute, add leafy greens to blanch. Drain.
  2. Mix light and dark soy sauces, black vinegar, scallion, ginger, garlic, Lao Gan Ma sauce, sesame oil, za-cai, and sesame seeds in a bowl.
  3. Heat oil in a wok, fry peanuts for 5-7 minutes until nicely cooked. Add remaining oil to mixed sauce.
  4. Combine everything, toss. Add chopped cilantro.
