Same Day Sourdough (via)

Variant of No Knead Recipe, but, like, with kneading.

Also steals some timing from The Bread Code

Ingredients

  • 125g whole wheat flour
  • 475g white bread flour
  • 400g water
  • 230g starter
  • 18g salt

Instructions

  1. Mix flour + water and leave for 30 to 60 minute autolyse
  2. Mix in starter + salt, combine
  3. Knead dough for 10-15 minutes, until consistency noticeably changes
  4. Cover, let rest for 4 hours
  5. Stretch and fold dough, remove from container and shape on floured surface
  6. Transfer shaped dough to banneton and let rise for another hour
  7. Bake at 450 for 30 minutes lid on, followed by lid off until desired color
