Same Day Sourdough (via)
Variant of No Knead Recipe, but, like, with kneading.
Also steals some timing from The Bread Code
Ingredients
- 125g whole wheat flour
- 475g white bread flour
- 400g water
- 230g starter
- 18g salt
Instructions
- Mix flour + water and leave for 30 to 60 minute autolyse
- Mix in starter + salt, combine
- Knead dough for 10-15 minutes, until consistency noticeably changes
- Cover, let rest for 4 hours
- Stretch and fold dough, remove from container and shape on floured surface
- Transfer shaped dough to banneton and let rise for another hour
- Bake at 450 for 30 minutes lid on, followed by lid off until desired color
